Best Black Forest Cake Recipe

The Germans call it Schwarzwälderkirschtorte. This black forest cake recipe is a chocolate layer cake with Kirsch, whipped cream, cherries and chocolate curls. Read those ingredients again! What's not to like? :-)

Ingredients for your Black Forest Cherry Cake Recipe

Chocolate Sponge Batter

2 cups whole eggs (8 large)
1 cup plus 2 tbsp. granulated sugar
1 3/4 cup plus 2 tsp stirred but not sifted cake flour
1/2 cup unsifted cocoa
3/8 tsp baking soda
1/4 cup plus 2 tbsp warm melted butter

Filling and Frosting Ingredients

1 19-oz can cherry pie filling
3/4 pint (15 ounces or 1 7/8 cup) whipping cream
2 tbsp. icing sugar
1 1/2 Tbsp Kirsch or Peter Heering liqueur
Bitter chocolate (see below)


Break eggs into large beater bowl. Add sugar. Beat 10 minutes at high speed until they are thick and tripled in bulk. Sift together the flour, cocoa and baking soda. Remove beaters and fold flour mixture in with wire whisk or slotted sppon, along with the warm melted butter. Divide evenly into three 9" layer cake pans. Line bottom of pans with buttered was paper. Bake at 375 ° for 18t o 20 minutes on center shelf in oven. Cool on cake racks.

With a long sharp knife, split each cake carefully to provide six layers. Place first layer on large cake plate and coer with 1/3 of the cherry pie filling. Cover with second layer and spread it with whipped cream flavored with the icing sugar and liqueur of your choice. Repeat, until you have six layers stacked with alternating fillings between. Spread whipped cream on sides. Decorate with halved red marashino or candied cherries and curls of bitter chocolate.

You'll have to hit the gym after eating this black forest cake recipe, but its worth it!
