First of the Jello Recipes -- Chocolate Orange Pie

1 chocolate pie crust. Tip: Use 2 cups of chocolate cookies made into crumbs. Mix with 1/2 cup melted butter or margarine. Pat into pie pan and chill in refrigerator until solid.)

1 package orange jello
1 cup vanilla ice cream
1 cup whipping cream, whipped
1 can mandarin oranges in light syrup, drained
syrup or juice from mandarin oranges plus enough water to make 2/3 cup

Heat mandarin orange juice and water until boiling. Dissolve orange jello powder in liquid. Spoon in vanilla ice cream and mix until blended. Blend in whipped topping and oranges. Spoon into pie crust and chill until set. Serve garnished with chocolate shavings.

Tip: You can substitute any flavor jello and any kind of fruit. Try strawberry jello and frozen or fresh strawberries. Lime jello and pineapple or kiwi fruit is another good combination. If using canned or frozen fruit, for best results, use fruit packed in light syrup or in its own juice.

Tip #2: To make your jello recipes lower calorie, use sugar-free jello, fresh fruit, and low calorie topping mix.

The Second of the Jello Recipes - Chocolate Jello Shortcake

1 8" by 8" chocolate cake, made from a recipe or from a mix. You'll find a recipe for chocolate cake on this web site if you need one.

1 package cherry jello
2 cups hot water, OR fruit juice with water added to make 2 cups
1 cup whipping cream, whipped
2 cups fresh cherries, pitted, or equivalent in canned or frozen cherries
1/4 cup sugar if using fresh or unsweetened cherries
chocolate shavings for garnish

Prepare fruit and sprinkle with sugar. Mix and set aside.

Make chocolate cake and cool completely. Dissolve jello in two cups of boiling water. Place in fridge until jello is partially, but not completely set. With a spoon or scoop, dig a hole in the middle of the chocolate cake. Place partially set jello in the hole and return cake to fridge until jello is completely set.

Before serving, spread whipped cream over top of cake. Spoon fruit and juice over whipped cream and serve.

Third of your Jello Recipes -- Chocolate Jewel Cake

2 cups chocolate cookie crumbs
1/2 cup butter or margarine, melted
1 package red colored jello
1 package green colored jello
1 package yellow colored jello
1 cup whipping cream, whipped
chocolate syrup for garnish
fresh fruit for garnish
4 1/2 cups boiling water

Prepare chocolate crust by mixing cookie crumbs with melted butter. Pat into bottom of square cake pan and refrigerate until crumbs set and form a crust.

Dissolve red jello in 11/2 cup of boiling water. Pour into loaf pan and chill until firm. Do the same with red and green jellos. You will be using three loaf pans.

When jellos are firm, cut all three flavors into cubes. Pour your cubes of jello into the whipped cream and mix gently. Pour whipped cream mixture into chocolate cookie crust. Top with sliced fresh fruit and drizzle with chocolate syrup.
